Beside him is Oscar, stepping in with steady hands while Aslak takes a well-earned rest. Together, they shape loaves that are honest, slow, and deeply alive.
Here, sourdough isn’t just baked; it’s grown, hand-shaped, and fired with wood. It begins with three simple things: farm-grown flour, water, and a living culture fed over years. The dough rests, is slowly folded, and rises to its own rhythm. The next day, the loaves meet the stone oven, where wood-fire and time turn them golden, crackling, and rich with the flavor of the fields. Every loaf carries the taste of Alm Østre: the grain, the soil, and the slow time the farm preserves.
